Jalapeño Popper Chicken - A Kick in the Buds

Howdy and welcome to Dee Dee's Diner.

Our special this week is a delicious Jalapeño Popper Chicken.

This recipe came to me while making my famous Jalapeño jam, created for my dear friend Teense Wilford. He swears it is either the best or 2nd best jam he has ever eaten.

Let's get started preparing and enjoying this delicious delight. You will need the following ingredients:

2 Large Boneless skinless chicken breast

1 block 8 oz softened cream cheese

1/4 C milk

1/2 Cup shredded Colby jack or cheddar cheese

1 Jalapeno diced

1 tsp onion powder

1 tsp garlic powder

1 tsp black pepper

1/2 Cup grated Parmesan cheese

6 red potatoes quartered

I start off by cutting a slit in one side of the chicken breast to make a pocket or butterfly it. Then, I combined the other ingredients and stuff the mixture in the chicken breast.

Next, I wrap two or three pieces of bacon around the breast before I place it on a bed of quartered red potatoes in a 13 inch by 9 inch baking dish. Drizzle the potatoes with olive oil and add a few shakes of parmesan cheese.

Bake at 375 degree Fahrenheit for 45 minutes until done.

For an added kick, I like to glaze it with my Jalapeño Jam.
